Flour Extra Class consists of finely divided particles of the inner layer of wheat (average particle size 30-40 microns).
It differs in white color, the largest (79-80%) starch content and medium or low quantity (10-14%) of proteins.
The yield of raw gluten is about 28%.
Ash content is not more than 0.55%. It contains a minimum amount of fiber (0.1-0.15%), fat and sugar.
